Every stop I made this road trip I was completely spoiled (even Rainier!) Here is the delicious recipe of the scones Aunt Rebecca made.
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup sugar
1/2 cup dried apricots, chopped very small (or cranberries)
1/4 cup white chocolate chips
1 1/4 cup heavy cream
Combine dry ingredients. Add fruit and chocolate. Use fork to stir in cream til rough mess. (whatever that is) Knead on floured board 8-9 times.
Press dough into a flat round and cut into triangles. (8 large or 12 small) Bake at 425 degrees for 11 minutes.
For glaze dissolve 2 tablespoons of melted butter. Brush on scones while they are still warm.
Enjoy!
