Yummy Recipe: Chicken in Coconut Milk Soup (Tom Kha Gai)

This is one of my favorites.

Ingredients:
Chicken Breast - sliced
2 cups thick coconut milk
1 cup thin coconut milk
5 thin slices of ginza (galangal)
2 stalks of lemongrass
4 shallots - sliced
Thai chillies (to taste)
mushrooms (straw mushrooms work well)
3 tablespoons fish sauce
2 tablespoons lime juice
3 kaffir lime leaves (torn into pieces)
1/2 chopped cilantro
2 spring onions - sliced

Start by putting the coconut milk in pot on high heat. Add the ginza (galangal), lemongrass, shallots, chillies, and mushrooms and bring to a boil. Simmer for 5 minutes then add the chicken and stir. Then add the fish sauce and kaffir lime leaves and bring back to the boil. Add half the cilantro and turn off the heat. Stir in the lime juice. Serve garnished with the rest of the cilantro and the spring onions.


Note: If there is an Asian market these ingredients are pretty common, but I wouldn't suggest trying to find these at Safeway or King Supers. Whole Foods is a MAYBE.
